How To Make Ryan’s Delicious And Healthy Quinoa Risotto

This week, the fabulous Ryan from Endorphin Stew shows us how to make his delicious but healthy Quinoa Risotto.

It’s so easy and quick, so there’s no excuse for you not to try it!

What you’ll need:

4 medium sized sweet potatoes – peeled, chopped and diced

Olive oil to fry

2 cloves of garlic

1 square of ginger

1 onion – red or white

A couple of sugar snap peas

One red pepper and one orange pepper

200g of quinoa

Drizzle of soy sauce

What do to:

Peel chop and dice the sweet potatoes

Fry them off in a saucepan with olive oil

Peel chop and dice the rest of the vegetables

Add them all to the same pan and fry off until soft

Add the quinoa and stir together

Drizzle over some soy sauce for more flavour
