How To Make Ryan’s Delicious Roasted Veggie Soup

The fabulous Ryan from Endorphin Stew is back this week with another delicious and easy recipe.

Try your hand at recreating his version of a wholesome roasted vegetable soup.

What You’ll Need:

1 Butternut Squash

2 Red Bell Peppers

1 Red Onion – skins still on

2 Cloves of Garlic – skins still on

A drizzle of Rapeseed Oil

1 Vegetable Stock

Salt, Pepper, Sage

What You’ll Need To Do:

Peel and chop all of the vegetables

Leave skins on the onion and the garlic so that they caramelize

Place them all in a baking tray

Pop them in the oven for 45 minutes at 180 degrees

Blend it all together and you’re done
